Marlene Lehman Shares Her Favorite Amish Dishes

In our latest conversation, I spoke with Marlene Lehman about her favorite Amish-style dishes. She named several that I’d never heard of before, including:

1. Salad Dressing Cake

Salad Dressing Cake uses Miracle Whip. And that’s how it gets its odd name. I admit when I heard “salad dressing cake” I first thought of Ranch or Vinagrette or Thousand Island dressing…not exactly my idea of appetizing cake flavors. But it’s actually a very chocolatey cake. It turns out the Miracle Whip substitutes for oil, eggs, milk, butter, etc.

2. Bob Andy Pie

I have no idea where the name comes from, but I think “Bob Andy Pie” is a great name. Maybe the creator named it after family members who particularly liked it? Or maybe “Bob Andy” is the guy who came up with it? No idea. Marlene says it is “almost like a custard pie”, and one her mom used to make. Apparently it’s got cinnamon and cloves in it. Sounds like a fun one.

3. What about Shoo-fly pie?

I asked Marlene about Shoofly pie as well. It’s arguably the most famous “Amish” pie (or rather, Pennsylvania Dutch pie). though it’s mainly associated with Pennsylvania Amish communities like Lancaster County. But I was particularly curious to what degree it may have spread to Indiana via businesses catering to tourist interest.

I’ve seen it outside of Pennsylvania, but mainly in places selling Amish-style products to the tourist contingent. Marlene shares her experience with shoofly pie, which isn’t too extensive.

      Bob Andy Pie

      I have a book called cooking from quilt country published by Marsha Adams. It was quite a well-known book as she had a program on public television for five or six years. In this book it is made up of mainly Amish and Mennonite recipes that she collected in her travels throughout Pennsylvania Ohio Indiana and other adjoining communities. She shares pictures of different quilts and as she visited with the women who handmade them they would give her their favorite recipes that have been passed down over many years. Bob Andy Pie is one of these. It is one of the few I have not made. She has a deep dish cherry pie that is very different from most pie recipes there is a great Fourth of July dessert. If you read this Eric I hope you could find yourself a copy as there is so much information about the Amish and Mennonites complete with pictures and Incredible recipes where are o cassions.
      I am on this book for 30 years and given it is a gift a few times as there is not one bad recipe in it in fact everything I have ever made from cracker jacks to a pork dinner or a summer salad dressing well they are all incredibly delicious. If I knew where you lived I’d send you a copy. You would enjoy it more than anyone I know.

        Cooking From Quilt Country

        Of all the cookbooks that I have, and that is too many, Marcia Adam’s is my most loved. Not because I cook from it much but the stories, beautiful pictures, just everything about it. I used to watch her every Saturday morning make a recipe and her delightful way of speaking then she would don a pair of gloves to show an old quilt that was on loan usually from an Indiana Museum specifically for the show. I was so happy to get this book 30+ years ago, a (requested) gift from my husband. In fact, I will get it out today and sit down with it, an old friend.

      Found the recipe at! Very Amish … LOTS of sugar.
      Supposedly named because an Amish farmer declared it to be as good as his two workhorses, Bob and Andy. If a pie was to be named after workhorses in the New Wilmington area, it might be called Dawn and Daisy, King and Queen, or Suzy and Lynn!

      Cook time: 35 Min Prep time: 15 Min Yield: 8
      1 9-inch unbaked pie crust
      1 c brown sugar, lightly packed
      2 Tbsp all-purpose flour
      1/4 tsp ground cloves
      1/2 tsp ground cinnamon
      1 1/2 Tbsp unsalted butter, melted
      2 lg eggs, separated
      1 c milk
      1. Preheat oven to 400F.
      2. In a large bowl, mix together brown sugar, flour, cloves and cinnamon.
      3. Add butter, egg yolks and milk to mixture.
      4. In a separate bowl, beat egg whites until stiff, then add to milk mixture.
      5. Pour into pie crust. Bake 10 minutes. Reduce oven to 350F. and bake another 20-25 minutes, or until set.
      6. Cool and serve.
